healthy carrot cake protein donuts with a coconut glaze
- 1 c spelt flour (or oat flour)
- 1 c vanilla protein powder
- 1 c natural sweetener
- 2 eggs
- 1/3 c coconut oil
- 1/2 c no fat Greek yogurt
- 1 tsp vanilla extract
- 2 tsp baking powder
- 1/4 tsp baking soda
- 1/4 tsp nutmeg
- 1/2 tsp ground cinnamon
- 1 c shredded carrot
- 1/2 c extra light cream cheese
- 2 tbsp coconut butter
- 2tbsp unsweetened almond milk
2 tsp vanilla extract
1/2 tsp salt
2/3 c natvia icing mix
Blend all the glaze ingredients in a blender and place in fridge until required.
Preheat the oven to 160C. Prepare a 6 hole or 12 donut pan with non-stick spray.
In a large bowl mix the protein powder, flour, baking powder, baking soda, spices and sweetener. Set aside.
In a medium sized bowl, mix the egg and Greek yogurt together. Pour the wet ingredients into the dry ingredients. stir in the coconut oil. Do not over mix, batter should be thick. Stir in carrots
Spoon the batter into the donut holes. Bake for 10-12 min. Remove donuts from pan and repeat with remaining batter then allow to cool slightly.
Spread the glaze over each donut, add some walnuts and extra carrot in top of desired.
